Taco Stuffed Peppers

Vibrant bell peppers stuffed with seasoned ground beef, black beans, and topped with melty cheese for a delicious Mexican-inspired meal.

  • 4 bell peppers
  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 1 oz. packet Taco Seasoning
  • 2 tablespoons tomato paste
  • 2 cloves garlic, minced
  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 (10 oz.) can Rotel Tomatoes with green chilies, drained
  • 2 cups shredded Mexican Cheese

Instructions

  1. Preheat oven to 350°F. Slice peppers in half lengthwise and remove stems/seeds.
  2. Place peppers cut-side up on greased baking sheet. Cover with foil and bake 15 minutes. Discard any water that collects.
  3. Meanwhile, brown ground beef in large pan over medium-high heat. Drain grease if needed.
  4. Add diced onions to meat and cook 5 minutes until softened.
  5. Stir in taco seasoning, tomato paste, and garlic. Cook 1 minute until fragrant.
  6. Add 2/3 cup water, bring to a boil, then reduce to simmer.
  7. Mix in black beans and Rotel tomatoes. Simmer 5 minutes.
  8. Fill pre-baked pepper halves with taco mixture and top with cheese.
  9. Bake uncovered for 15 minutes until cheese is melted and bubbly.

Notes

For homemade taco seasoning, combine 1 tablespoon chili powder, 1 teaspoon each of cumin and paprika, 1/2 teaspoon each of garlic powder, onion powder, oregano, salt, and pepper. Nutrition facts are estimates and may vary based on ingredients used, portion sizes, and preparation methods.
