Teriyaki Beef Casserole

  • pounds lean ground beef
  • 3 cloves garlic, minced
  • 1 tablespoon fresh grated ginger
  • ½ cup sliced green onions, white and green parts separated
  • 1 cup teriyaki sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 1 cup cooked jasmine rice (preferably day-old)
  • 1 cup frozen peas and carrots
  • ½ cup sliced water chestnuts (optional)
  • 1 red bell pepper, diced
  • 1 cup shredded mozzarella cheese, divided
  • 2 tablespoons sesame seeds
  • ⅓ cup panko breadcrumbs (optional)

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch casserole dish.
  2. In a large skillet over medium-high heat, brown the ground beef, breaking it into small pieces, until no pink remains (about 5-7 minutes).
  3. Drain excess fat, leaving just enough to coat the pan.
  4. Reduce heat to medium and add minced garlic, grated ginger, and white parts of green onions. Sauté for 1-2 minutes until fragrant.
  5. Stir in teriyaki sauce and simmer for 2 minutes, allowing the sauce to thicken slightly.
  6. Add sesame oil and soy sauce, stirring to combine.
  7. Fold in the cooked rice, frozen peas and carrots, water chestnuts, and bell pepper until well mixed.
  8. Stir in half the mozzarella cheese (½ cup) until it begins to melt.
  9. Transfer the mixture to the prepared casserole dish and spread into an even layer.
  10. Top with remaining ½ cup mozzarella cheese and the green parts of the green onions.
  11. If using, mix panko breadcrumbs with a drizzle of oil and sprinkle over the top.
  12. Bake uncovered for 20-25 minutes until cheese is melted and bubbling, with golden-brown spots appearing.
  13. Remove from oven and let stand for 5 minutes before serving.
  14. Garnish with sesame seeds and additional green onions if desired.

Notes

  • For best results, use day-old rice that has been refrigerated. Fresh rice can make the casserole too moist.
  • To make this gluten-free, use gluten-free teriyaki sauce and tamari instead of soy sauce.
  • Leftovers can be stored in an airtight container for up to 4 days in the refrigerator or frozen for up to 3 months.
