Texas Roadhouse Smothered Chicken

A perfect copycat of the famous Texas Roadhouse dish featuring tender marinated chicken breasts topped with sautéed mushrooms, onions, and melted Monterey Jack cheese.

 

Ingredients

  • 1 ½2 lb. boneless skinless chicken breasts (2 medium-large chicken breasts)
  • ½ cup Italian dressing
  • 1 tbsp. avocado oil or other neutral, high heat oil
  • 1 tbsp. butter
  • 10 oz. cremini mushrooms, sliced
  • ½ cup yellow onion, sliced
  • 2 tbsp. water approximately
  • ¼ tsp. white pepper
  • ¼ tsp. black pepper
  • ¼ tsp. onion powder
  • ¼ tsp. garlic powder
  • ½ tsp. salt
  • 2 oz. Monterey Jack cheese, sliced

Instructions

  1. Tenderize chicken breasts by poking several holes with a jacquard tool or fork (10-15 times per side).
  2. Place chicken in a dish or zip-top bag, add Italian dressing, and marinate for 2-24 hours in refrigerator.
  3. Preheat oven to 400°F.
  4. Heat oil in cast iron skillet over medium-high heat. Brown chicken 5 minutes per side, then set aside.
  5. Reduce heat to medium, add butter, and sauté mushrooms and onions for 5-7 minutes until softened.
  6. Add water to deglaze the pan, scraping up browned bits from bottom.
  7. Stir in all seasonings, then push vegetables aside and return chicken to skillet.
  8. Distribute mushroom-onion mixture evenly over chicken breasts.
  9. Top with cheese slices and bake for 10 minutes until chicken reaches 165°F and cheese is melted.
  10. Rest for 2-3 minutes before serving.
