Homemade Chicken Noodle Soup

Classic homemade chicken noodle soup with tender shredded chicken, vegetables, and egg noodles in a flavorful broth – the ultimate comfort food.

 

Ingredients

  • 1 medium yellow onion
  • 3 garlic cloves
  • 4 carrots
  • 2 ribs celery
  • 1 Tbsp fresh parsley
  • 2 Tbsp olive oil
  • 1 tsp dried basil
  • ½ tsp dried thyme
  • 1 bay leaf
  • ¼ tsp black pepper
  • 13 tsp salt
  • 2 chicken breasts
  • 8 cups chicken broth
  • 6 oz. egg noodles

Instructions

  1. Dice onion, mince garlic, peel and dice carrots, dice celery, and mince parsley. Set parsley aside.
  2. Heat olive oil in large soup pot over medium heat. Add onion, carrots, and celery; cook until softened (about 6 minutes).
  3. Add garlic, basil, thyme, bay leaf, pepper, and 1 tsp salt. Cook 5 more minutes.
  4. Add chicken breasts and pour in chicken broth.
  5. Cover, bring to boil, then reduce heat to low. Simmer for one hour.
  6. Remove chicken, shred with two forks, and return to pot.
  7. Taste broth and add additional salt if needed.
  8. Add egg noodles, increase heat to high, and cook until tender (about 7 minutes).
  9. Garnish with fresh parsley and serve hot.

Notes
