Turkey Sausage Mushroom Gravy

  • 1 pound turkey sausage, crumbled
  • 2 cups mushrooms, sliced (button, cremini, or baby portobello)
  • 3 tablespoons butter, unsalted
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth, low-sodium preferred
  • 1/2 cup milk (optional)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 23 cloves garlic, minced
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried)
  • 1 teaspoon fresh sage, chopped (or 1/2 teaspoon dried)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat a large skillet over medium heat. Add olive oil if your turkey sausage is lean. Add crumbled turkey sausage, breaking it up as it cooks, until fully browned (7-9 minutes). Transfer to a paper towel-lined plate, leaving about 1 tablespoon of drippings in the pan.
  2. In the same skillet, melt the butter. Add diced onion and sauté for 2-3 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add sliced mushrooms and increase heat to medium-high. Cook for 5-7 minutes, stirring occasionally, until mushrooms have released their moisture and begun to brown.
  4. Sprinkle flour over the mushroom mixture. Stir continuously for 1-2 minutes to form a roux, coating the mushrooms evenly. The mixture should look paste-like and slightly golden.
  5. Gradually pour in chicken broth while whisking constantly to prevent lumps. Use the whisk to scrape up any browned bits from the bottom of the pan. Bring to a gentle simmer.
  6. Slowly add milk (if using), continuing to whisk. Add thyme, sage, Worcestershire sauce, Dijon mustard, and red pepper flakes if desired. Reduce heat to medium-low and simmer for 3-5 minutes until the gravy begins to thicken.
  7. Return the cooked turkey sausage to the skillet, stirring to incorporate throughout the gravy. Simmer for an additional 5 minutes to allow flavors to meld and gravy to reach desired thickness.
  8. Season with salt and black pepper to taste. Simmer for another 2-3 minutes after final seasoning.
  9. Remove from heat and let stand for 2-3 minutes before serving. The gravy will continue to thicken slightly as it cools.

  • For a dairy-free version, substitute butter with olive oil and milk with additional broth or unsweetened plant-based milk.
