Turkey Stuffed Potatoes

For the Sweet Potatoes

  • 4 medium sweet potatoes
  • ⅓ teaspoon ground cumin
  • 1 teaspoon olive oil or avocado oil
  • Salt, to taste
  • Black pepper, to taste

For the Filling

  • 1 pound lean ground turkey
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • Salt and black pepper, to taste
  • 1 cup canned diced tomatoes (with juices)
  • 1 medium zucchini, grated
  • 1 red bell pepper, diced and sautéed
  • 2 cups roasted mushrooms (cremini, shiitake, or button)
  • 1 large handful fresh spinach, chopped
  • 1 cup black beans (optional)
  • 1 cup corn kernels, fresh or frozen (optional)
  • 1 cup shredded cheddar cheese

Optional Toppings

  • Sliced green onions
  • Salsa
  • Greek yogurt or sour cream
  • Fresh cilantro

Instructions

  1. Cook sweet potatoes either by microwaving (pierce and cook 3 minutes per side) or baking at 425°F for 45-50 minutes until tender.
  2. Let potatoes cool slightly, then slice lengthwise and scoop out flesh, leaving a thin shell.
  3. Mix sweet potato flesh with oil, cumin, salt, and pepper, then return to shells.
  4. Roast mushrooms at 425°F with olive oil, salt, and pepper for 10-15 minutes.
  5. Sauté red bell pepper in a small pan until softened.
  6. In a large skillet, heat oil and cook garlic until fragrant.
  7. Add turkey, breaking apart while cooking until browned.
  8. Stir in all seasonings, then add tomatoes, zucchini, bell pepper, mushrooms, and spinach.
  9. Cook 2-3 minutes until spinach wilts, then add optional beans and corn.
  10. Fill potato shells with turkey mixture and top with cheese.
  11. Broil 6-8 minutes until cheese melts and begins to brown.
  12. Garnish with desired toppings before serving.

Notes

Sweet potatoes can be prepared up to 2 days ahead. The turkey filling can also be made in advance and refrigerated. For a complete meal prep, assemble everything except cheese, refrigerate, then top with cheese and broil before serving.
