Perfectly tender turkey wings with a sweet-tart cranberry pomegranate glaze that caramelizes beautifully.

  • 4 1/2 pounds turkey wings
  • 1/4 cup olive oil
  • 1 tablespoon smoked paprika
  • 2 teaspoons seasoned salt
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • 1 cup water or chicken broth
  • 1 tablespoon all-purpose flour
  • 1 cup whole cranberries
  • 4 fresh thyme sprigs
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil or butter
  • Pinch of salt
  • Pinch of black pepper
  • 1 cup whole cranberries
  • 1 cup pomegranate juice
  • 1/2 cup brown sugar
  • 1/4 cup orange marmalade
  • 1 tablespoon cornstarch mixed with 3 tablespoons warm water
  • Lemon slices, optional

Instructions

  1. Preheat oven to 375°F. Grease a 9×13-inch baking dish.
  2. Mix olive oil with spices, coat wings thoroughly, and let rest 15 minutes.
  3. Arrange wings in dish, add liquid, cranberries, and thyme. Sprinkle with flour, cover, and bake until tender, about 75 minutes.
  4. Meanwhile, caramelize onions in oil with salt and pepper until golden, about 30 minutes.
  5. In the same pan, combine remaining cranberries, pomegranate juice, and brown sugar. Simmer until cranberries burst, add marmalade, and thicken with cornstarch slurry.
  6. Remove foil from wings, drain some liquid, top with onions and glaze.
  7. Increase oven to 425°F and bake uncovered 20-25 minutes until caramelized.
  8. Rest 5-10 minutes before serving.
