A Mediterranean-inspired savory pie featuring roasted zucchini, tangy feta cheese, and savory turkey bacon for a delicious meal any time of day.

 

Ingredients

  • 3 large zucchini, sliced
  • 1 medium red onion, diced
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste
  • 4 slices turkey bacon, cooked crisp and crumbled
  • 3 eggs, lightly beaten
  • 5 ounces crumbled feta cheese
  • 1/4 cup grated parmesan
  • 1/2 teaspoon dried thyme
  • 1/4 cup breadcrumbs (or almond flour)
  • 1/2 cup shredded mozzarella
  • Extra parmesan for topping

Instructions

  1. Preheat oven to 400°F. Line baking sheet with parchment paper and spread zucchini and onion evenly.
  2. Season vegetables with olive oil, garlic powder, onion powder, salt, and pepper. Roast for 20-22 minutes until tender.
  3. Reduce oven temperature to 375°F.
  4. Cook turkey bacon until crisp, cool, then crumble.
  5. Combine eggs, feta, parmesan, breadcrumbs, thyme, and seasonings in a bowl. Fold in roasted vegetables and most of the bacon.
  6. Spread half the mixture into a 9-inch pie dish. Add mozzarella layer, then remaining mixture. Top with reserved bacon and extra parmesan.
  7. Bake for 50 minutes until golden and set.
  8. Let cool 10-15 minutes before slicing.

Notes

For a gluten-free version, substitute almond flour for breadcrumbs. To prevent excess moisture, thoroughly roast zucchini and let the baked pie rest before slicing. Nutrition facts are estimates and may vary based on ingredients used, portion sizes, and preparation methods.
