  • 3 very ripe bananas (medium/large)
  • ½ cup unsalted butter (8 Tbsp) at room temperature
  • ¾ cup granulated sugar
  • 2 large eggs, lightly beaten
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp vanilla extract
  • 1 cup walnuts
  • ½ cup raisins

Instructions

  1. Preheat oven to 350°F. Grease and flour a 9.25×5.25×2.75 inch loaf pan.
  2. Lightly toast walnuts in a skillet over medium heat, stirring constantly. Cool and coarsely chop.
  3. In a mixing bowl, cream together softened butter and sugar until fluffy.
  4. Mash bananas with a fork until chunky and add to the batter along with beaten eggs, mixing until combined.
  5. In a separate bowl, whisk together flour, baking soda, and salt, then gradually add to the wet ingredients.
  6. Stir in vanilla extract and fold in chopped walnuts and raisins.
  7. Pour batter into prepared pan and bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Let bread rest in the pan for 10 minutes before transferring to a wire rack to cool completely.
