Instructions
In a medium saucepan, combine milk, cream, half the sugar, and salt. Heat over medium heat until simmering around the edges (5-7 minutes). Do not boil.
In a medium bowl, whisk egg yolks with remaining sugar until pale yellow and slightly thickened (2-3 minutes).
Carefully ladle about 1 cup of the hot milk mixture into the egg mixture, whisking constantly to temper the eggs. Continue adding hot liquid in 1/2 cup increments while whisking.
Pour the tempered egg mixture back into the saucepan with the remaining milk mixture, whisking continuously.
Cook over medium-low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon (3-5 minutes).
Remove from heat and whisk in the Biscoff cookie butter and vanilla until completely smooth.
Transfer custard to a large bowl and cool to room temperature, then cover with plastic wrap pressed directly onto the surface.
Refrigerate for at least 4 hours, preferably overnight.
Pour chilled custard into your ice cream maker and churn according to manufacturer’s instructions (usually 20-25 minutes).
In the last minute of churning, add any optional mix-ins like crushed Biscoff cookies.
Transfer to an airtight container, adding swirls of additional ingredients if desired.
Freeze for at least 4 hours or until firm. Let sit at room temperature for 5-10 minutes before serving.
Notes
For the best texture, ensure your custard base is completely chilled before churning.
If you don’t have an ice cream maker, pour the chilled custard into a shallow container and freeze for 45 minutes, then vigorously whisk. Repeat every 30 minutes for 3-4 hours.
Store with plastic wrap pressed directly on the surface to prevent ice crystals.
