Velvety chestnut soup with buttery toasted chestnuts is the perfect winter comfort food, balancing natural sweetness with aromatic herbs.

 

Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, thinly sliced
  • 1 1/4 pounds chestnuts, peeled and roughly chopped
  • 2 cloves garlic, minced
  • 2 teaspoons fresh or dried rosemary
  • 1/8 teaspoon ground nutmeg
  • 3 cups water
  • 1 vegetable bouillon cube
  • 1 3/4 cups milk
  • Salt, to taste
  • Ground black pepper, to taste
  • For the topping:
  • 10 whole chestnuts
  • 1 tablespoon butter
  • Pinch of salt

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion with a pinch of salt and cook until soft and golden, about 5-7 minutes.
  2. Add garlic and cook for 30-60 seconds until fragrant.
  3. Add chopped chestnuts and cook for 2-3 minutes to lightly toast.
  4. Stir in rosemary and nutmeg.
  5. Add water and bring to a gentle boil.
  6. Add bouillon cube, reduce heat, and simmer until chestnuts are tender, about 20-25 minutes.
  7. Remove from heat and blend until smooth.
  8. Return to low heat, stir in milk, and warm gently for 5 minutes without boiling.
  9. Season with salt and black pepper.
  10. For topping, melt butter in a skillet over low heat, add whole chestnuts and salt, cooking until golden.
  11. Serve soup topped with butter-toasted chestnuts.
