Chicken Pho Noodle Soup

Authentic Vietnamese chicken pho with aromatic spices, tender chicken thighs, and silky rice noodles in a rich, flavorful broth.

  • 1 medium yellow onion, halved
  • 1 large piece fresh ginger (about 4 inches), halved
  • 1 stalk lemongrass, trimmed and lightly smashed
  • 2 teaspoons coriander seeds
  • 2 teaspoons fennel seeds
  • 1 pound boneless, skinless chicken thighs
  • 1 medium daikon, peeled and cut into chunks
  • 2 teaspoons salt, plus more to taste
  • 4 cups low-sodium chicken broth
  • 34 cups baby bok choy, halved or quartered
  • 1 package pho-style rice noodles (fresh or dried)
  • 2 stalks green onions, finely sliced
  • 2 tablespoons fresh cilantro, minced
  • 1/4 cup fried shallots
  • Fish sauce to taste (optional)

Instructions

  1. Char onion and ginger under the broiler for 10-15 minutes until blackened in spots.
  2. Toast coriander and fennel seeds in a dry pan for 1-3 minutes until fragrant. Place in a spice pouch or cheesecloth.
  3. In a large pot, combine charred aromatics, chicken, daikon, lemongrass, spice pouch, and salt. Cover with water.
  4. Bring to a boil, then reduce heat and simmer for 30 minutes.
  5. Remove chicken and set aside. Add bok choy to the broth.
  6. Shred the chicken into bite-sized pieces.
  7. Add chicken broth to the pot and simmer for another 30 minutes. Strain for a clearer broth if desired.
  8. Cook noodles according to package directions.
  9. Assemble bowls with noodles, chicken, bok choy, herbs, and shallots.
  10. Ladle hot broth over each bowl and season with fish sauce if desired.
