Chirashi Sushi

A vibrant Japanese dish featuring colorful toppings beautifully arranged on seasoned sushi rice, offering the delicious flavors of sushi in an approachable bowl format.

 

Ingredients

  • 2 cups short-grain sushi rice
  • 2 ½ cups water
  • ¼ cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 6 oz sashimi-grade tuna, thinly sliced
  • 6 oz sashimi-grade salmon, thinly sliced
  • 2 eggs
  • 1 small cucumber, thinly sliced
  • 1 sheet nori (seaweed), cut into thin strips
  • 1 tablespoon toasted sesame seeds
  • Pickled ginger, for serving
  • Soy sauce, for serving
  • Wasabi, for serving
  • Optional: sliced avocado, radish, or scallions for garnish

Instructions

  1. Rinse sushi rice repeatedly until water runs clear, then drain thoroughly.
  2. Cook rice with water according to rice cooker instructions or bring to boil in pot, reduce heat, cover and simmer for 15 minutes, then let rest covered for 10 minutes.
  3. Mix rice vinegar, sugar and salt in small saucepan, heat just until dissolved, then cool.
  4. Transfer cooked rice to large bowl and gently fold in vinegar mixture using a wooden paddle. Allow to cool to room temperature.
  5. Beat eggs with pinch of sugar and salt, then cook thin omelet sheets in non-stick pan. Cool and slice into strips.
  6. Prepare all toppings: slice fish, cucumber, and cut nori into strips.
  7. Assemble bowls by spreading seasoned rice as base, then artistically arrange fish, omelet strips, cucumber and other toppings.
  8. Sprinkle with sesame seeds and nori strips, then serve immediately with soy sauce, wasabi and pickled ginger.
