Cottage Cheese Bread Recipe

Incredibly soft and moist homemade bread with cottage cheese for a tender texture and subtle tangy flavor.

  • 2¼ teaspoons active dry yeast
  • 1 tablespoon honey, or sugar
  • ½ cup warm water, 110°F
  • 1 cup cottage cheese, room temperature and mashed
  • 1 large egg, beaten
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon salt
  • 3 cups bread flour, or 2¾ cups all-purpose flour, adding more if needed
  • Optional: ½ teaspoon garlic powder
  • Optional: 1 teaspoon dried Italian herbs
  • Optional: ½ cup shredded cheddar, or parmesan

Instructions

  1. Combine yeast, honey, and warm water in a small bowl. Let sit 5-10 minutes until foamy.
  2. In a large bowl, mix cottage cheese, egg, melted butter, and salt.
  3. Add activated yeast mixture to the cottage cheese mixture and stir well.
  4. Gradually add flour, mixing until a soft, slightly sticky dough forms.
  5. Knead dough for 8-10 minutes by hand or 6 minutes with stand mixer until smooth and elastic.
  6. Set the dough in a greased bowl, cover it, and let it rise for 1–1.5 hours, or until it doubles in size.
  7. Punch down dough, shape into a loaf, and place in greased 9×5-inch pan.
  8. Let rise again 30-45 minutes until dough extends above pan edge.
  9. Bake at 375°F for 30-35 minutes until golden and internal temperature reaches 190-200°F.
  10. Cool in pan 10 minutes, then transfer to wire rack to cool completely before slicing.

 

Notes

For variations, add herbs, cheese, or spices to the dough before the first rise.
