Coconut Curry Meatballs

Tender beef meatballs simmered in a rich coconut curry sauce with fresh herbs and aromatic spices. A perfect balance of comfort and exotic flavors!

  • 1 pound 93% lean ground beef
  • 1 Tablespoon + 1 teaspoon fresh ginger divided
  • 4 cloves garlic minced, divided
  • ½ teaspoon kosher salt
  • 1 Tablespoon olive oil
  • 1 green bell pepper thinly sliced
  • 1 onion thinly sliced
  • 2 Tablespoons red curry paste
  • 1 lime juiced
  • 2 teaspoons fish sauce
  • 1 can (13.5 ounces) coconut milk
  • ¼ cup fresh basil chopped
  • ¼ cup fresh cilantro chopped
  • 2 Tablespoons toasted coconut

Instructions

  1. Combine beef with 1 teaspoon ginger, half the garlic, and salt in a bowl. Form into 1-inch meatballs.
  2. Heat oil in a large skillet over medium-high heat. Add meatballs and brown for 2-3 minutes per side.
  3. Push meatballs to edges and add pepper and onion to the center. Cook for 3-4 minutes until softened.
  4. Add curry paste, remaining garlic and ginger, and stir to coat vegetables.
  5. Pour in coconut milk, fish sauce, and lime juice. Reduce heat to medium and simmer for 10 minutes until sauce thickens.
  6. Stir in basil and cilantro. Top with toasted coconut before serving.

Notes
