Gingerbread Cookies

Classic spiced gingerbread cookies with the perfect blend of ginger, cinnamon, and molasses for holiday baking.

  • 3 and 1/2 cups (440g) all-purpose flour (spooned & leveled)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 Tablespoon ground ginger (yes, 1 full Tablespoon!)
  • 1 Tablespoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground cloves
  • 10 Tablespoons (142g) unsalted butter, softened to room temperature
  • 3/4 cup (150g) packed light or dark brown sugar
  • 2/3 cup (160ml; about 200g) unsulphured or dark molasses (do not use blackstrap)
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • Optional: easy cookie icing, royal icing, or cookie buttercream

Instructions

  1. Whisk together flour, baking soda, salt, ginger, cinnamon, allspice, and cloves in a large bowl. Set aside.
  2. Beat butter for 1 minute until smooth, then add brown sugar and molasses. Beat until combined and creamy.
  3. Add egg and vanilla, beating on high for 2 minutes. The mixture may separate slightly.
  4. Gradually mix in the flour mixture on low speed until combined into a thick, slightly sticky dough.
  5. Divide dough in half, wrap in plastic wrap as discs, and chill for at least 3 hours or overnight.
  6. Preheat oven to 350°F (177°C). Line baking sheets with parchment paper.
  7. Roll one disc of chilled dough to 1/4-inch thickness on a floured surface. Cut into desired shapes.
  8. Place shapes 1 inch apart on prepared baking sheets and bake for 9-10 minutes.
  9. Allow cookies to cool for 5 minutes on the baking sheet before transferring to a cooling rack.
  10. Once completely cool, decorate as desired with icing.

Notes

For soft gingerbread cookies, bake for the minimum suggested time. For crisper cookies, extend the baking time by 1-2 minutes.
