Ingredients

  • 2 lb boneless chicken breasts, cut into 2-inch pieces
  • 1 large egg, beaten
  • 3 1/2 cups finely crushed cornflakes
  • 1/4 cup grated Parmesan
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • Olive oil for drizzling
  • 3 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup carrot matchsticks
  • 1 cup sliced mushrooms
  • Olive oil

Salt and pepper

  • 1/2 cup soy sauce or tamari
  • 2 tablespoons honey
  • 12 tablespoons gochujang
  • 2 tablespoons rice vinegar
  • 1 tablespoon grated fresh ginger
  • 3 garlic cloves, grated
  • 2 tablespoons toasted sesame oil
  • 1/4 cup water
  • 1/3 cup toasted cashews, chopped
  • 3 tablespoons toasted sesame seeds
  • 1/2 cup chopped green onions
  • 1 clove garlic, finely minced
  • Pinch crushed red pepper
  • Small pinch of salt
  • Lime wedges
  • Steamed rice

Instructions

  1. Preheat oven to 450°F and line a large baking sheet with parchment paper.
  2. Dip chicken pieces in beaten egg, then coat in a mixture of crushed cornflakes, Parmesan, salt, and pepper.
  3. Place coated chicken on one side of the sheet pan and drizzle with olive oil.
  4. Toss vegetables with olive oil, salt, and pepper, and arrange on the other side of the pan.
  5. Bake for 15-20 minutes until chicken is nearly cooked through.
  6. Meanwhile, combine soy sauce, honey, gochujang, rice vinegar, ginger, garlic, sesame oil, and water in a saucepan and simmer for 5 minutes until slightly thickened.
  7. Remove sheet pan from oven, transfer vegetables to a serving dish, and coat chicken with the gochujang glaze.
  8. Return chicken to oven for 5 more minutes until glaze is caramelized and chicken reaches 165°F.
  9. Mix cashews, sesame seeds, green onions, garlic, red pepper, and salt for the topping.
  10. Serve chicken and vegetables over rice, garnished with the crunchy topping and lime wedges.
