  • 16 ounces rotini or other medium pasta
  • ¾ English cucumber diced
  • 1 pint grape tomatoes halved
  • 1 bell pepper red or orange, diced
  • ½ cup sliced pitted olives
  • ½ cup crumbled feta cheese
  • ⅓ cup diced red onion
  • 1 cup Greek dressing

Instructions

  1. Cook pasta according to package directions until al dente. Drain the food, then rinse it with cold water to halt the cooking process.
  2. In a large bowl, combine cooled pasta with cucumber, tomatoes, bell pepper, olives, feta cheese, and red onion.
  3. Pour Greek dressing over the salad and gently toss until all ingredients are evenly coated.
  4. Cover and refrigerate for at least 2 hours before serving to allow flavors to blend.

Notes

This salad tastes even better the next day! For best results, save a little dressing to refresh the salad just before serving.
