Ingredients

Scale
  • 2 cups all-purpose flour (250g)
  • 1 Tablespoon baking powder
  • 1 Tablespoon granulated sugar
  • 1 teaspoon salt
  • 6 Tablespoons unsalted butter very cold (85g)
  • ¾ cup whole milk (177ml)

Instructions

  1. Chill butter in freezer for 10-20 minutes. Preheat the oven to 425°F and prepare a baking sheet with parchment paper.
  2. Mix flour, baking powder, sugar, and salt in large bowl.
  3. Grate cold butter into flour mixture and stir until mixture resembles coarse crumbs.
  4. Add milk and stir gently until just combined.
  5. Transfer dough to floured surface and work gently until cohesive.
  6. Fold dough in half, flatten, rotate 90 degrees, and repeat 5-6 times to create layers.
  7. Pat dough to 1-inch thickness and cut with floured 2¾-inch biscuit cutter.
  8. Place biscuits close together on baking sheet and bake for 12 minutes until lightly golden.
  9. If desired, brush with melted salted butter immediately after baking.

Notes

Keep ingredients as cold as possible throughout the process for the flakiest results. Handle dough gently to avoid tough biscuits.
