  • 1/2 large onion, diced white or yellow
  • 3 large garlic cloves, minced
  • 1/2 cup orzo
  • 1 cup long grain white rice rinsed
  • 3 cups stock vegetable or chicken
  • 1/4 teaspoon coriander
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/2 cup fresh parsley, chopped

Instructions

  1. Heat 1 tablespoon olive oil in a skillet over medium heat. Add onion and garlic, sautéing for 60-90 seconds until fragrant.
  2. Add orzo, stir to coat, and toast for 3 minutes, stirring frequently.
  3. Add remaining olive oil and rice, stirring to coat all grains. Toast for 4-5 minutes until rice becomes translucent.
  4. Stir in all spices and salt, combining well with the rice mixture.
  5. Slowly add stock (ensure it’s room temperature or warm). Heat until it reaches a boil, then lower the temperature to maintain a gentle simmer.
  6. Cover and cook undisturbed for 15 minutes.
  7. Remove from heat and let rest, covered, for 3 additional minutes.
  8. Remove lid, add fresh parsley, and fluff with a fork before serving.

Notes

For best results, avoid lifting the lid during cooking.
