Instructions

  1. Allow cream cheese to soften at room temperature for 30-45 minutes.
  2. In a large bowl, beat softened cream cheese and peanut butter with an electric mixer on medium speed for 2-3 minutes until smooth and fluffy.
  3. Gradually add powdered sugar, mixing well after each addition until fully incorporated.
  4. Add vanilla extract and mix for another 30 seconds until well combined.
  5. Taste filling and adjust sweetness if needed.
  6. Using a cookie scoop or spoon, divide the mixture evenly among the mini graham cracker crusts.
  7. Smooth tops with the back of a spoon dipped in warm water.
  8. Add any optional toppings like chopped peanuts or chocolate chips, gently pressing into surface.
