Parmesan Roast Turkey

A show-stopping holiday turkey with a crispy Parmesan cheese crust and herb-butter infused meat that stays juicy and flavorful.

 

Ingredients

  • 1 stick (8 tablespoons) unsalted butter, at room temperature
  • 2 teaspoons minced fresh rosemary
  • 2 teaspoons minced fresh thyme
  • 2 cloves garlic, minced
  • Finely grated zest of 1 lemon
  • 1 1/2 cups grated Parmesan (about 6 ounces)
  • Kosher salt and freshly ground black pepper
  • One 10– to 12-pound turkey, spatchcocked by your butcher
  • 2 tablespoons extra-virgin olive oil

Instructions

  1. Position rack in center of oven and preheat to 375°F. Fit wire rack inside rimmed baking sheet.
  2. Mix butter, herbs, garlic, lemon zest, 1/2 cup Parmesan, salt and pepper until smooth.
  3. Pat turkey dry and season with salt and pepper on all sides. Place skin-side up on prepared baking sheet.
  4. Carefully loosen skin over breast and legs, then spread herb-butter mixture underneath.
  5. Rub olive oil over skin and sprinkle with remaining Parmesan.
  6. Roast until Parmesan is golden and internal temperature reaches 165°F, about 1.5-2 hours.
  7. Rest turkey for 30 minutes before carving.
