Peanut Butter Icebox Cake

  • 1 cup creamy peanut butter
  • 1/2 cup melted chocolate
  • 1/4 cup unsalted butter, melted
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 2 cups crushed graham crackers
  • 1/4 tsp sea salt
  • 1/2 cup chopped roasted peanuts (optional)
  • 1/4 cup mini chocolate chips (optional)
  • Extra melted chocolate for drizzling (optional)
  • Whipped cream for serving (optional)

Instructions

  1. Mix melted butter with powdered sugar in a medium bowl until well combined.
  2. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  3. Combine crushed graham crackers with the butter mixture and spread evenly over the crust, pressing down gently.
  4. In a large mixing bowl, whisk together peanut butter, melted chocolate, sea salt, and vanilla until completely smooth.
  5. In a separate bowl, whip the heavy cream until soft peaks form, about 2-3 minutes.
  6. Gently fold the whipped cream into the peanut butter chocolate mixture using a rubber spatula.
  7. If using, fold in chopped peanuts and mini chocolate chips.
  8. Pour the peanut butter mixture over the crust, spreading evenly with an offset spatula.
  9. Tap the pan gently on the counter to release any air bubbles.
  10. Refrigerate for at least 4 hours or overnight until completely set.
  11. Before serving, run a thin knife around the edge and release the springform pan.
  12. Drizzle with additional melted chocolate if desired.
  13. Slice and serve chilled.

  • For best results, chill the cake overnight to allow flavors to fully develop and texture to set properly.
  • Make sure to use regular creamy peanut butter, not natural varieties that separate.
  • For cleaner slices, dip your knife in hot water and wipe dry between cuts.
