Pear Goat Cheese Puff Pastry Tarts

  • 2 medium ripe pears (Anjou or Bosc), thinly sliced
  • 4 ounces goat cheese, softened
  • 2 teaspoons honey, plus extra for drizzling

  • Pinch of freshly ground black pepper
  • 1 egg beaten with 1 tablespoon water (optional, for egg wash)
  • Flaky sea salt (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Unfold thawed puff pastry on a lightly floured surface and cut into 9 equal squares (about 3×3 inches each).
  3. Transfer squares to prepared baking sheet, leaving 1 inch between each.
  4. Score a ½-inch border around each pastry square, cutting halfway through the dough.
  5. Prick the inner portion of each square several times with a fork.
  6. Mix softened goat cheese with 1 teaspoon honey until smooth.
  7. Spread goat cheese mixture onto the center of each square, staying within the scored border.
  8. Arrange 2-3 thin pear slices on top of the goat cheese.
  9. Drizzle remaining honey over pears and sprinkle with thyme leaves and black pepper.
  10. Brush pastry borders with egg wash if desired.
  11. Bake for 15-20 minutes until pastry is puffed and golden brown.
  12. Allow tarts to cool for 5 minutes before transferring to a wire rack.
  13. Serve warm or at room temperature with additional honey drizzle if desired.
