  • 1 head cauliflower, cut into small florets
  • 1 can chickpeas, drained, rinsed, and patted dry
  • 8 oz mushrooms, sliced
  • 3 tablespoons olive oil
  • 2 tablespoons maple syrup
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 ribs celery, sliced into 1/4-inch pieces
  • 5 slices turkey bacon, cut into 1/2-inch pieces
  • 1/2 cup dried cranberries

Instructions

  1. Preheat oven to 425°F.
  2. In a large bowl, combine cauliflower, chickpeas, mushrooms, olive oil, maple syrup, rosemary, thyme, salt, and pepper; toss until evenly coated.
  3. Spread mixture on a large baking sheet in a single layer and roast for 25 minutes.
  4. Remove from oven, add celery and turkey bacon, gently stir, and return to oven for another 20-25 minutes until vegetables are caramelized.
  5. Remove from oven and stir in dried cranberries while still warm.
  6. Serve hot as a side dish or over grains for a complete meal.
