Seafood Chowder

Luxurious seafood chowder featuring sea scallops, white fish, lobster and shrimp in a velvety cream base. Restaurant-quality results at home!

 

Ingredients

  • 12 large sea scallops
  • 1 cup firm white fish, bite-size pieces
  • 1 cup cooked lobster meat, chopped
  • 18 large shrimp, peeled and deveined
  • 2 tablespoons butter or olive oil
  • 2 celery stalks, finely diced
  • 2 garlic cloves, minced
  • 2 large potatoes, cubed
  • 2 large carrots, sliced
  • 4 cups water
  • 1 teaspoon salt
  • 3 cups heavy cream
  • ¼ teaspoon black pepper
  • 2 tablespoons fresh chives
  • 2 tablespoons fresh dill

Instructions

  1. Pat scallops dry thoroughly with paper towels and set aside.
  2. In a large pot, melt butter over medium heat and cook diced celery for 3-4 minutes until softened. Add minced garlic and cook 30 seconds more.
  3. In a separate skillet, sear scallops in butter until golden brown, about 1-2 minutes per side. Remove and set aside.
  4. Add potatoes and carrots to the main pot, then add water and salt. Simmer for about 15 minutes until vegetables are tender.
  5. Add heavy cream and bring to a gentle simmer (never boil).
  6. Add white fish and cook for 3 minutes, then add shrimp for 2-3 minutes, and finally add lobster just to warm through.
  7. Season with black pepper, stir in half the fresh herbs, and serve with seared scallops on top, garnished with remaining herbs.
