Perfect Herb Butter Turkey Recipe

A foolproof turkey recipe featuring herb butter for incredibly juicy, flavorful results every time.

Ingredients

  • 1 12-20 pound turkey
  • 1 onion, peeled and quartered
  • 1 lemon, quartered
  • 1 apple (your favorite kind), quartered
  • 0.75 ounce container fresh rosemary
  • 0.75 ounce container fresh thyme
  • 0.75 ounce container fresh sage
 
For the herb butter:
 
  • 1 cup unsalted butter, softened
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 68 cloves garlic, minced
  • fresh chopped herbs

Instructions

  1. Thaw turkey in refrigerator (24 hours per 5 pounds plus an extra day).
  2. Remove turkey from refrigerator 1 hour before roasting.
  3. Preheat the oven to 325°F, making sure the rack is placed in the middle.
  4. Make herb butter by combining softened butter, garlic, salt, pepper, and chopped herbs.
  5. Remove turkey from packaging, discard giblets, and pat completely dry.
  6. Season cavity with salt and pepper; stuff with quartered lemon, onion, apple, and herbs.
  7. Loosen skin over breast and spread herb butter underneath.
  8. Tuck wings under turkey and place on roasting rack.
  9. Brush remaining herb butter over entire exterior.
  10. Roast for 13-15 minutes per pound until internal temperature reaches 165°F.
  11. Tent with foil when skin turns golden brown to prevent overcooking.
  12. Rest for 20-30 minutes before carving.
