Wild Mushroom Stew

Earthy mushrooms, smoky bacon and tart berries combine in a creamy, flavorful Nordic-inspired stew perfect for cool evenings.

 

Ingredients

  • 1 large onion, finely diced
  • 2 garlic cloves, crushed
  • 14 ounces wild or firm mushrooms, sliced
  • 4 ounces smoked turkey bacon or beef bacon, diced
  • 5 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1 cup apple cider
  • 1 cup beef broth or vegetable broth
  • ⅔ cup heavy cream
  • 1½ teaspoons crushed juniper berries
  • ½ cup red currants or lingonberries
  • Salt & black pepper, to taste

Instructions

  1. Heat 2 tablespoons butter in a heavy pot over medium heat. Add bacon and cook until golden. Remove with a slotted spoon and set aside.
  2. Add mushrooms to the same pot. Cook until they release moisture and begin to caramelize. Transfer to bowl with bacon.
  3. Lower heat, add remaining 3 tablespoons butter. Cook onion and garlic until soft and lightly golden.
  4. Sprinkle flour over onions, stir and cook for 1 minute. Gradually whisk in apple cider, then broth until smooth.
  5. Add cream and juniper berries, simmer for 6 minutes until thickened.
  6. Return mushrooms and bacon to pot. Fold in berries and season with salt and pepper. Simmer 1-2 minutes more until heated through.
