Instructions
In a small bowl, mix salt, pepper, garlic powder, and paprika. Coat the chicken breasts evenly on both sides with the seasoning mix.
Bring a large pot of salted water to a boil. Add bowtie pasta and cook according to package instructions until al dente. Drain and set aside.
Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5–7 minutes per side, or until fully cooked and golden brown. Remove from skillet and set aside.
In the same skillet, melt the butter. Add sliced shallot and cook for 1–2 minutes until fragrant and soft.
Sprinkle in the flour and stir to combine. Cook for 1 minute to eliminate the raw flour taste.
Slowly pour in chicken stock, stirring constantly to avoid lumps. Simmer for 2–3 minutes until the sauce thickens.
Stir in sun-dried tomatoes and Italian seasoning. Simmer for another minute to deepen the flavor.
Turn off the heat. Stir in heavy cream and parmesan cheese until the sauce becomes creamy and smooth.
Add cooked pasta to the sauce and toss to coat. Slice the cooked chicken and place on top. Serve immediately.
